报告人简介:

professor at Department of Food Engineering, School of EngineeringKing Mongkut's Institute of Technology Ladkrabang(KMITL),Thailand. He hold Bachelor of Engineering and Master ofEngineering, both in Food Engineering, from KMITL. He completed his Ph.D. in Process Engineering at Paris Institute of Technology for Life, Food and Environmental Sciences (AgroParisTech, France). His research interest area includes food refrigeration and preservation technologies, quality and safety of perishable food products and cold chain.

泰国皇家理工大学工程学院食品工程系的教授。拥有泰国皇家理工大学食品工程学士学位和工程硕士学位。在巴黎食品和环境科学技术学院取得工程博士学位。主要研究方向为食品冷藏与保鲜技术、易腐食品质量安全与冷链保鲜

报告摘要:

Temperature plays a crucial role in ensuring food quality and safety. This fact necessitates temperature control throughout food supply chains, known as the "Cold Chain." The term "cold" does not mean "low temperature," but rather refers to the "proper temperature" as some commodities, such as tropical fruits, are sensitive to low temperatures. Despite implementing rigorous operations, temperature breaks within the cold chain are frequently reported in numerous studies. Gaining knowledge about the thermo-aerodynamics of refrigerated equipment used at each step of the chain would enable operators to utilize the equipment more effectively.

温度控制在食品质量和安全方面起着至关重要的作用。“冷链”贮藏中的“冷”一词并不是并非单“低温”,而是指“适当的温度”,一些果蔬商品,特别是热带水果,对低温敏感低温冷害在冷链贮藏中时有发生。了解冷藏设备的热空气动力学,可以使操作员更有效地利用设备提高冷链的使用效率
