Jackfruit (Artocarpus heterophyllus L.) cv. Tekam Yellow was studied to assess how floral and fruit development influence aril quality. Female inflorescences matured in 92–130 days. Fruit growth plateaued at 13 weeks after anthesis (WAA). Arils at 14 WAA showed higher soluble solids and β-carotene than at 12 WAA, indicating greater sweetness and nutritional value. Harvesting at 14 WAA optimizes nutrition and processing.
